Del Cambio is an experience deeply rooted in history, expressed through contemporary elegance and shaped by the centuries-old encounter between Piedmont and France. Every detail preserves a living memory, reflected in the gastronomic offering, which draws inspiration from historical texts such as the renowned 1766 recipe book il cuoco piemontese perfezionato a Parigi, the first major codification of regional cuisine and a precious testimony to the encounter between Piedmontese tradition and the refined techniques of French gastronomy. An extraordinary treasure of more than 16,000 bottles and over 4,000 labels, gathered from iconic producers and remarkable niche winemakers. The Del Cambio wine cellar, older even than the Restaurant, reaches back to the 17th century, a hidden vault that preserves the whispers of centuries past.
