DEL CAMBIO
THE RESTAURANT
Driven by a creative energy that spans the centuries, Del Cambio embodies the future of tradition, renewing the memory of the past through a contemporary vision shaped by elegance and taste. From this harmony emerges an experience that engages all the senses, transforming every moment into a genuine ritual of excellence.
HISTORY & ART
Founded in 1757 in the heart of Turin, Del Cambio was born in a vibrant era at the crossroads between the Savoy Kingdom and France, and has continued to evolve over time. Here, history takes shape in a distinctive style expressed through art and beauty, enriched today by works from contemporary artists that highlight and celebrate its heritage.
PHILOSOPHY
Del Cambio is an experience that highlights its historical roots, where the centuries-long dialogue between Piedmontese and French culture is expressed with both elegance and a contemporary voice. Every detail evokes the living memory of this unique place, carefully preserved and thoughtfully reinterpreted with sensitivity and integrity.
CULINARY VISION
The culinary vision celebrates history, seasonality, and territory, highlighting local ingredients and rediscovering the most authentic flavors by returning to its roots. It draws inspiration from historic texts, such as Il Cuoco piemontese perfezionato a Parigi from 1766, the renowned recipe collection born in the same era as Del Cambio, which illustrates the encounter of Piedmontese tradition and the elegance of French cuisine, providing a rare window onto the noble tables of the eighteenth century. Reinterpreted with thoughtful attention and a contemporary vision, this heritage awakens the essence of the era, offering a unique and timeless experience.
A SHARED NARRATIVE
At Del Cambio, culinary expression emerges from the meeting of history and a shared vision, where collective thought shapes a unique experience. Guided by chef Diego Giglio in operational leadership and by chef Francesco Rovai in creative vision and the path of research and development, the young talents of the brigade weave together memory and innovation, transforming tradition into creative energy that celebrates and renders the essence of Del Cambio eternal.
THE WINE CELLAR
An extraordinary treasure of more than 16,000 bottles and over 4,000 labels, gathered from iconic producers and remarkable niche winemakers. The Del Cambio wine cellar, older even than the Restaurant, reaches back to the 17th century, a hidden vault that preserves the whispers of centuries past.
