DEL CAMBIO
THE RESTAURANT
Driven by a creative energy that spans the centuries, Del Cambio embodies the future of tradition, renewing the memory of the past through a contemporary vision shaped by elegance and taste. From this harmony emerges an experience that engages all the senses, transforming every moment into a genuine ritual of excellence.
HISTORY & ART
Founded in 1757 in the heart of Turin, Del Cambio was born in a vibrant era at the crossroads between the Savoy Kingdom and France, and has continued to evolve over time. Here, history takes shape in a distinctive style expressed through art and beauty, enriched today by works from contemporary artists that highlight and celebrate its heritage.
PHILOSOPHY
Del Cambio is an experience deeply rooted in history, expressed through contemporary elegance and shaped by the centuries-old encounter between Piedmont and France. Every detail preserves a living memory, reflected in the gastronomic offering, which draws inspiration from historical texts such as the renowned 1766 recipe book il cuoco piemontese perfezionato a Parigi, the first major codification of regional cuisine and a precious testimony to the encounter between Piedmontese tradition and the refined techniques of French gastronomy. A heritage now reinterpreted with profound respect and contemporary sensibility, capable of awakening the essence of an era and transforming it into a unique, timeless experience.
CULINARY VISION
Drawing inspiration from the earliest codifications of Piedmontese cuisine and its historic dialogue with French tradition, each dish evokes a gastronomic heritage defined by rigor, refinement, and depth of flavor, offering a rare glimpse into the noble tables of the eighteenth century. Local ingredients, carefully selected with respect for seasonality, are interpreted through a contemporary sensibility, capable of restoring the spirit of an era while preserving contemporary lightness and balance. Tradition and research thus converge in a culinary offering that transforms memory into a living experience, celebrating time, beauty, and the authenticity of flavors in an ongoing dialogue between past and present.
A SHARED NARRATIVE
At Del Cambio, culinary expression emerges from the meeting of history and a shared vision, where collective thought shapes a unique experience.
THE WINE CELLAR
The Del Cambio wine cellar, even older than the Restaurant, has its roots in the 17th century. This special vault holds an extraordinary treasure of over 16,000 bottles and more than 4,000 labels, selected from among the finest wines and niche productions.
