The birth of an icon

Del Cambio first opened as a Café on October 5, 1757, swiftly becoming a lively crossroads in the city’s social life, where travelers, aristocrats, and intellectuals would meet and exchange ideas. Its name, rich with historical and legendary echoes, recalls the changing of horses or currency, and over time has come to embody a spirit of cosmopolitan culture and timeless elegance.

The indissoluble bond with France

Del Cambio was established in Turin during the Savoy era, when the city was the capital of the Duchy of Savoy and strongly shaped by French influence. The city, able to welcome and reinterpret external influences without losing its own identity, offered a vibrant and cosmopolitan backdrop. In this context Del Cambio takes shape, combining Piedmontese elegance with French style from the very beginning, becoming a symbol of a refined identity, at once open to the world and deeply rooted in its territory.

In the vibrant climate of cultural exchange of the time, Piedmont transformed French influences into a unique gastronomic heritage, exemplified by Il Cuoco piemontese perfezionato a Parigi (1766), the first codification of regional cuisine. This work reimagined French techniques with grace and elegance, adapting them to local ingredients while preserving their authenticity. Inspired by the same spirit, Del Cambio continues today to breathe new life into tradition, revisiting historic recipes and knowledge through a contemporary lens. Its culinary journey tells of a living legacy — where past and future, local roots and worldly horizons, meet in perfect harmony.

The rebirth project

In 2014, under the vision of the entreprenuer Michele Denegri, Del Cambio experienced a profound rebirth, guided by ambition and deep respect for its history. The historic rooms, meticulously restored under the supervision of heritage authorities, were complemented by new spaces brought into the present through the interventions of artists such as Pistoletto, Gamper, Bronstein, and Herrera. The project stands as a genuine expression of Del Cambio’s strong bond with the city of Turin and its ongoing dialogue with the social and cultural heart of the city.
