CULINARY VISION
The culinary vision celebrates history, seasonality, and territory, enhancing local ingredients and rediscovering the most authentic flavors by returning to its roots. It draws inspiration from ancient texts and historic cookbooks, such as the 1766 Il Cuoco piemontese perfezionato a Parigi, reinterpreting their essence to create a new taste experience that evokes timeless emotions.
THE WINE CELLAR
An extraordinary treasure of more than 16,000 bottles and over 4,000 labels, gathered from iconic producers and remarkable niche winemakers. The Del Cambio Cellar, older even than the Restaurant, reaches back to the 17th century, a hidden vault that preserves the whispers of centuries past.
