The wine list

Del Cambio’s cellars are even older than the venue. They date back to the seventeenth century and constitute not only the material but also the “spiritual” foundations of the restaurant. A list of about 2,200 labels and 20,000 bottles of wine is able to satisfy even the most demanding guest.

The cellars date back to the seventeenth century and constitute not only the material but also the “spiritual” foundations of the restaurant.

In this special vault of over 300 square meters, kept in optimal conditions of temperature and humidity, “sleeps” a treasure of over 16,000 bottles with about 4,000 labels selected by our sommeliers. The goal is to give space not only to recognized excellence, but also to “research”, thanks to a selection carried out in Italy and abroad.

From Champagne to exclusive Burgundy wines, from Tuscan red wines to prestigious Bordeaux: all the great wine families are represented. Piedmont, however, with about 1,200 labels between Barolo and Barbaresco, retains a leading role.

Tavolo della Cantina

An all-encompassing experience that highlights the taste of wine.

Walking along the seventeenth-century corridors with red-brick arched ceilings, you enter a space-time short-circuit, a special room, a minimalist and at the same time – embracing atmosphere, whose pièce de résistance is the wine. It’s the “Tavolo della Cantina”, a place where past, present, and future coexist in a fluid and seamless manner.

Guests are welcomed and guided by Del Cambio’s sommeliers and experience the best of world enology, from the best red wines of Italy and the world to Garage Champagne, produced in no more than 100 bottles per year, literally unavailable anywhere else. It’s possible to make food and wine tours created for the occasion by Matteo Baronetto, characterized by a convivial atmosphere. You can also choose masterclasses and tastings, in collaboration with the most prestigious producers of the national and world wine scene, in a perfect location to host events of great importance.
